Grilled Asparagus, Soba Noodle & Watercress Salad. Miso-Lemon Dressing

Something Clean Something Green

For my first every recipe for this blog, I wanted to do something simple with asparagus, one of my favourite vegetables. I manage to resist and only buy British, when it’s in season, so when spring comes round I love cooking with it whenever I can. This recipe is great, as it can be whipped up in 15 min, and is so easy to put together! The asparagus takes on a great texture and flavour when grilled, and combined with the salty, citrus-y dressing and crunch of chia seeds, is lovely.

Serves 1

  • Soba Noodles. One Portion
  • Asparagus spears. 10
  • Olive oil. Drizzle of
  • Salt & pepper
  • Miso paste. 1 tablespoon
  • Lemon juice. 1 tablespoon
  • Soy sauce. 1 teaspoon
  • Olive oil. Half a tablespoon
  • Handful of watercress
  • Chia seeds. 1 tablespoon

Bring a medium pan of water with a pinch of salt to the boil. Heat the grill to medium.
