Coconut Vanilla Cake

IMG_1654So moist and creamy gahhhhh this is definitely one of the best, if not the best cake I’ve made to date. Fluffy, soft, creamy and full of fresh vanilla and coconut flavor in every bite. This is more on the indulging side as vegan cakes go, with sugar and a lot of nuts, but you WILL be nuts for another bite once you try it 😉

Ingredients

Cake:

1 1/2 cups shredded coconut

1 cup coconut milk

1 cup of almond flour or powder

1 1/2 cups of whole wheat flour

3 tsp baking powder

1 tsp baking soda

1/4 cup of coconut oil

1 cup of sugar

1 tsp salt

1 tbsp of cinnamon

paste from 3 vanilla beans (slit vertically and scrape out)

Icing:

2 cups of macadamia

1/2 cup of powder sugar

paste from 2 vanilla beans

1 cup of coconut milk

1 cup of shredded coconut
