Easy Almond & Apricot Truffles

Did your taste buds get excited just by reading the title? Excellent, so did mine! These truffles are gooey and tasty, and a great alternative to store bought sweets. They are dairy-free, gluten-free and without added sugar. A Paleo fan would approve.. I think! Here’s the recipe:

Prep time: 10 minutes. Waiting time: 1 hour. Makes 10-15 truffles.

Dried apricots, non-sulfite treated, 150g
Almonds, 150g (or alnuts/pecans, or a mix of all three if you like)
Coconut flakes, 4 tblsp
Water, 1-2 tblsp

1. Place the almonds and apricots in a food processor. Mix until turned into a paste. Add water if the mixture is too thick.

2. Spread coconut flakes out on a flat surface. Roll small balls of dough between your hands, then roll through the coconut. Repeat until the batter is finished (resist eating all the truffles as you go!).
