After a lot of experimentation in the kitchen, I have finally found a gluten-free, dairy-free muffin recipe worth sharing. I decided to try out these Oatmeal Power Muffins on Memorial Day, and I just happened to have lots of freshly picked strawberries in the kitchen, so I turned them into Red, White, and Blue Oatmeal Power Muffins for the sake of being festive. They tasted pretty darn good, too!
Unlike so many of the other gluten-free muffin recipes that I have tried out in the past, these did not turn out flat, the were perfectly moist, and they didn’t require a long list of unusual ingredients.
